Stuffed Peppers

Stuffed peppers require just 15 minutes of preparation, and approximately 45 minutes to cook on the stove top. It is a hearty meal that is out of the ordinary.

Stuffed Peppers

1 pound ground beef
1/4 cup raw long-grain rice
4 medium green peppers
2 cloves of garlic
1 can of whole roma tomatoes
1 egg
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cumin
2 bullion cubes
2 cups water

In a large bowl, combine the ground beef, rice, garlic, salt, pepper, cumin, and egg. Mix until all the ingredients are well distributed, and divide into 4 portions. Cut the tops off the peppers, and remove the seeds. Stuff the peppers with the ground beef mixture. Place the stuffed peppers, the can of tomatoes, the bullion cubes, and the water into a Dutch oven, and bring to a boil. Cover, and continue boiling at low heat for 45 minutes. The rice will expand as it cooks. Serve topped with a spoonful of sour cream.
