A steak-and-mushrooms dinner is easy to prepare and provides a nutritious and satisfying meal. With good organization, you can go from the kitchen to the table in about twenty minutes.
Ingredients:
1 medium onion, chopped
1/2 pound mushrooms, sliced
1 sprig of parsley or cilantro, chopped
1 tablespoon oil
salt and pepper to taste
1 New York strip or rib eye steak
Preparation:
In a medium covered pot, sauté the onion in the oil until translucent. Add the sliced mushrooms,
chopped parsley and season with salt and pepper. Loosely cover, and cook for about 10 minutes,
stirring occasionally.
While the mushrooms cook, heat a heavy frying pan or cast iron skillet on medium high heat.
Sear the steak which has been lightly salted by placing it in the middle of the hot, dry pan.
Cook 30 seconds without moving. Turn over with tongs
and cook another 30 seconds. Flip steak and cook for 2 or 3 minutes on each side depending on
whether you prefer medium-rare or medium steak.
Place the steak on a plate and garnish with the cooked mushrooms and extra parsley. Enjoy!
