Russian apple cake (Sharlotka)

The Russians would say "Шарлотка очень вкусный и полезный яблочный пирог" (Sharlotka is a very delicious and healthy apple cake). Indeed, the ingredients are very basic and fat free. The following recipe uses nutmeg and cinnamon for flavoring, but these spices may be omitted. The caramelized apples provide plenty of flavor.

Russian apple cake (Sharlotka)

1 cup flour
1 cup sugar
3 eggs
2 medium-sized tart apples
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp nutmeg

Preheat oven to 350°F. Core the apples and cut them into thin slices. Mix the cinnamon and nutmeg with the apple slices. Beat eggs with sugar in a bowl until foamy. Stir in flour and baking soda gradually. Beat until smooth. Grease a pan and dust it lightly with flour. Layer half the apples on the bottom of pan. Pour half of the batter over the apples. Layer the remaining apple slices, pour the rest of the batter and spread smooth. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
