Unpeeled white potatoes and red potatoes can be combined to create a tasty and colorful side dish. A combination of white potatoes and sweet potatoes, instead of red potatoes, is also very good, but the sweet potatoes must be peeled because their skin is tough.
Ingredients:
2 white potatoes
2 red potatoes
1 carrot
1 tablespoon olive oil
dash of garlic powder
1 teaspoon paprika
salt and pepper
Preparation:
Scrub the potatoes and carrot with a vegetable brush under running water to remove all
dirt. Cut the potatoes and the carrot into byte-sized pieces and place them in a
microwave-safe bowl. Add the oil and mix it with the vegetables to cover them uniformly.
sprinkle with garlic powder, paprika, salt, and black pepper. Mix again.
Cover, and microwave for 4 minutes. Stir with a fork and microwave another 3 to 4 minutes
until potatoes are tender. Allow to rest for 5 minutes before serving.
