These almond flour cookies are not too sweet, but they are extremely satisfying as a snack. Almond flour is naturally gluten-free, so it is a healthy choice for people who cannot eat products with wheat flour.
1/3 cup butter (melted) (5.3 Tbs)
1/4 cup sugar
1 egg (room temperature)
1/2 tsp almond extract
1 tsp vanilla extract
2 cups almond flour
1/2 tsp baking soda
Preheat oven to 350° F.
Mix the butter, sugar, egg and extracts until uniform.
Mix the almond flour and baking soda. It is important to mix the baking soda uniformly into the almond flour, and then add it to the mixture. Mix all the ingredients to make a soft dough.
Make 1-inch balls. As a surprise, you can add a raisin, a chocolate chip, or an almond when you make the balls. Place the balls on a baking sheet covered with parchment paper 2-inches apart, and flatten them. Bake for 13 to 15 minutes until the bottoms are brown.
