 Salsa
Mexican Salsa

There are several types of Mexican salsa. Here are two popular varieties:

Traditional Red Salsa
Ingredients:
1 ripe tomato
1/2 medium onion
1 jalapeño pepper (use serrano pepper for spicier taste)
A few sprigs of cilantro
salt
black pepper
ground cumin (optional)

Preparation:
Slice the pepper in half to remove the seeds, and chop all the ingredients. Season with salt and pepper to taste. Enjoy with tortilla chips or as a garnish for steak or other dishes. A pinch of ground cumin may be added for a different taste.

Tomatillos
Green Salsa
Ingredients:
8 ripe tomatillos (little green tomatos enclosed in a paper-like husk)
1/2 medium onion
3 cloves of garlic
2 jalapeño peppers (use serrano peppers for spicier taste)
A few sprigs of cilantro
1 ripe avocado
salt
black pepper

Preparation:
Puree the tomatillos, onion, pepper, and garlic in a blender or food processor. Chop by hand the cilantro, and cut the avocado into small cubes. Combine all ingredients in a serving bowl. Season with salt and pepper to taste.
