Valentine Cake

A delicious valentine cake can bring new life to a relationship. This is a recipe for yellow cake that is an ideal foundation for celebrating any occasion. It makes one 13- by 9-inch cake or 2 (8- or 9-inch) round cakes.


 Valentine Cake

Ingredients:
2 cups of flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1 cup sugar
3 large eggs kept at room temperature for 30 minutes
1 1/2 teaspoons vanilla
3/4 cup whole milk

Preparation:
Preheat oven to 350°F.  Butter and flour the baking pan(s). Sift together the flour, baking powder, and salt into a bowl. Beat butter and sugar with an electric mixer at medium speed until fluffy. Beat in eggs, one at a time. Add vanilla and beat 5 minutes. Add the flour and milk alternately, mixing at low speed until the batter is smooth. Bake for approximately 25 minutes, until the cake starts to pull away from the sides and a toothpick inserted in the middle comes out clean. When done, invert onto a rack and cool completely.

Apply chocolate frosting and decorate with strawberries or raspberries.
